Don’t Throw Away Money to Catch Up

It was a long day for me yesterday. Work was a mess and I couldn’t help but look up at the clock every hour. (only to find that it was more like every half hour) I was anxious to get home. Sometimes it seems the only thing that keeps me going back to that place is the paycheck I will collect at the end of the week. And even today, although payday is just 1 day away, it seems so so far from now. I figured maybe I deserved to go out last night, but that idea was short lived because of the phone call I got from an old high school friend of mine. Turns out my long time friend (who has been long lost) was in town visiting some family for a few days. Of course I wanted to hang out. Afterall, we had a lot of catching up to do.

So let me tell you what the issue was. There was no way I had enough to take my buddy out. You figure we may need a lot of time to catch up and who knows how much food and drinks will add up to at the end of the night. I decided to keep my last $20 and arrange for a little dinner at my place. Surely I could just make some food at home. I had some time before I was expecting my friend to come over, so I got started. I was a little disappointed to realize I needed to go to the supermarket. I had just about everything I needed at home, but I had to pick up  1 pound of lean ground beef ($3.50), 1 can of tomato sauce ($2.50), and 1 can of  tomato paste (.50). Who knows how much I saved! I only ended up spending $6.50!

If you’re interested, I can give you the recipe I got from recipezaar.com.  It was a hit that night. Good thing I made extras because my pal brought over his wife and kid. All four of us ate…for $6.50! HAHAHA. (evil laugh)

Ingredients

Directions

  1. Brown ground beef, onion and garlic in frypan.
  2. Add tomato sauce, tomato paste, salt and oregano.
  3. Cook long enough to get it warm.
  4. Spoon a layer of meat sauce onto the bottom of the slow cooker.
  5. Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.
  6. Repeat with sauce, noodles and cheeses until all are used up.
  7. Cover and cook on low for 4 to 5 hours.
