Lasagna Wannabe
1 pound cooked elbow macaroni (any small pasta will do)
1 pound of your favorite meat ( beef, chicken, sausage, Ground turkey or tofu crumbles)
1 jar (26 ounces) Pasta Sauce, fresh works too!
grated Parmesan cheese -(you control that amount)
2 eggs
1 pound Ricotta cheese
2 cups shredded mozzarella cheese
2 cups diced Veggies
salt and pepper to taste
Cook your pasta and brown your meat. Drain both well. While those are cooking dice your veggies and then combine the eggs, ricotta, grated Parmesan and salt and pepper.
Mix together the cooked meat, pasta, sauce and veggies. Add the cheese mixture and combine well.
Preheat oven to 350 degrees F.
Coat a 9×13 baking dish and then spread half your mixture into bottom. Top that with a cup of mozzarella and Parmesan. Spread the remaining pasta mixture on top and add the rest of the mozzarella cheese and more Parmesan. Cover with foil.
Bake covered for 20 minutes. Uncover and bake another 10 to 20 minutes until the cheese on top is lightly browned.
